Wine Cork Closures Impacts on Dimethyl Sulfide (DMS) and Precursors (DMSP) Equilibrium of Different Shiraz Wines during Accelerated Bottle Ageing

Dimethyl sulfide (DMS) is a flavor compound, characteristic of the truffle aroma in red wines, and well-known to be fruity exhauster. DMS comes from degradation dimethyl potential (DMSP) during winemaking. Up now, little known about role closure on DMSP ageing. For that purpose, effect four micro-agglomerated wine cork closures was studied DMS/DMSP equilibrium, along with six other volatile sulfur compounds (VSC), investigated Shiraz wines. After three months accelerated bottle ageing, levels increased significantly all bottles. The most permeable induced lesser accumulation DMS, suggesting could dependent redox status wine. At same time, decrease proportional permeability closures. first possible implication observed.
